Turkey Quesadillas

We've made Thanksgiving ourselves the past 4 years, so we've learned to use up all of our leftovers with pretty much any recipe you use for chicken. Last night I made turkey quesadillas. Tonight we are having turkey noodle soup.

Turkey/Chicken Quesadillas

2 1/2 cups shredded turkey

1 pkg. McCormick's fajita dry seasoning

2T olive oil

1/2 c. water

10 flour tortillas
shredded cheese

salsa, guacamole, sour cream


In a skillet, heat oil. Add turkey, seasoning, and water. Heat through. If using chicken...dice chicken breasts, place in ziploc bag and follow instructions on back of seasoning pkg. for marinating raw chicken. Then place in a skillet with hot oil and cook.


Place 1/4 c. chicken and cheese in a tortilla. Fold in half and place on an electric skillet, or non-stick skillet on the stove on med-high head. NO OIL or SPRAY NECESSARY. Tortillas don't stick. Heat until tortilla browns on both sides and cheese is melted. Cut into 3 triangles. Repeat for remaining tortillas. Serve with condiments of your choice! We had these with Dallin's rice pilaf that he made, and steamed veggies with beans.

  1. Quesadillas are a great idea! I never thought of using the turkey for that. We'll have to try that this week. We are having turkey noodle soup tonight too! Lol.
