I love the idea of camping! It sounds so fun, cozy, and exhilarating....but a lot of work. We used to go as a family when I was little and it was awesome! But now as an adult....I've been maybe three times and only once that the kids can remember. We took them for a one night trip last summer... only 30 minutes away! They were GIDDY. So giddy and could have played in the tent all night. So it's time that we do a "real" trip, I guess. And this time we'll bring an air mattress {oh the memory...rocks, chills, noisy neighbors, It was an awful night for us, but the kids slept great!}.
We're planning a camping trip when we go to Palmyra, New York this summer for the Hill Cumorah Pageant. 3 nights, then off to Niagara Falls for a few days (in a hotel :). I've been scouring the web for ideas.

We usually do some sort of foil packs with potatoes and kielbasa, hot dogs, pancakes, etc. But I'd like to try some new ideas!

Do you have any? If so, I'd love to hear about them! You don't have to attach a link, just let me know what you do! Anyone would have more experience than me! I remember making meatloaf in an onion when I was 12 at girl's camp one year (I think the only year that I went the entire time...I 'm not a fan of the Girl's Camp program, lol) and it was really good. I should try to find instructions online!
We had "walking tacos" recently and they were a HIT! We'll definitely be doing these for a lunch or dinner while camping! Just pile all of your taco fixings on top of your Frito chips...no dishes, no mess. Yum!
Camping isn't camping without Jiffy popcorn. We're big popcorn fans over here so will probably have this every night along with s'mores.

As a side note: My sister, Stacy, and I are twins...born 16 months apart. Seriously, that's what I think sometimes. It's crazy when we talk on the phone and tell eachother what's going on in our lives...it's always the same. Last night while I was coming up with ideas of camping foods, she was posting hers from a recent trip to Yosemite. The SAME ideas I found online. I love it! We are ALWAYS on the same wave length. YUM! That stuff looks delicious. I do admit to as outdoorsy as I am, I've rarely actually been camping. We own a cottage (HA. It's really a hunting cabin in the middle of no where). We'd do the whole outdoor food type stuff but for us, it was more just being around people. I think it would be really fun to find some sort of a cabin to rent with a bunch of people. I just have many memories of sitting at our huge table (two HUGE picnic tables next to each other) with a bunch of different people. Sure the guy on your left may be someone you don't know but it was just great to be with so many different people who all (well mostly all) love the outdoors. And now I'm rambling... anyway, I think it's great that you're taking your kids camping :) I think I'll stop now.

We make what we call "Hobo meals" which is just like your foil packs. We take seasoned ground beef, make it into a patty, add some asparagus, potatoes, mini corn, onions, and carrots. Sprinkle everything with Worchestershire (sp?) sauce and salt and pepper, throw it all in some foil and cook. It's wonderful.
ReplyDeleteAlso, when we go camping I always bake some "corn dog muffins" ahead of time. Make a box of Jiffy corn muffin mix, add shredded cheese and diced hot dogs and bake as normal. They freeze wonderfully and my kids will eat them when thawed to room temp. This goes in their school lunches often. You can also add leftover chicken and frozen veggies to the corn muffin mixture and make chicken and veggie muffins. Those are good too!
We were always "in charge" of doing our own hot dogs over the fire.
ReplyDeleteWe went camping last fall and we made apple dumplings in the dutch oven. It was delicious! I found the recipe online somewhere...sorry I don't remember, but it was super easy because I just packed the dry ingredients already mixed together in a ziplock and it called for biscuits as the dumpling part...so yummy.
ReplyDeleteI remember making cakes in orange peels when I was in YW. I'm sure you can google them or something and find a recipe, they were yummy, with a hint or orange.
ReplyDeleteSpaghetti is actually pretty easy too. You can cook things ahead of time and then just warm up in the dutch oven. Really most things are great in a dutch oven. Cobblers are Great! Chicken and rice was something we ate a lot. Most things you can just get some good coals going and then let the food slow cook - its kind of like a camping crock pot! I loved camping as a kid. I'll admit, it's a lot more work as an adult...but still lots of fun to get away. Hope you enjoy your trip!

ReplyDeleteI've been following your blog for awhile...love your ideas! We just got back from a camping trip and used peanut butter cups instead of hershey bar for smores...so good! For a breakfast we cooked hash browns, bacon, and eggs on a skillet and also did beef stew from a can in a pot on our portable stove for lunch.
ReplyDeleteWe love omelets in a zip lock, you can prepare it almost all before you go. Just dice all your favorite omelet veggies and cheese fixings, spice to taste with salt and pepper etc. In the a.m.
ReplyDeleteeveryone gets a ziploc back (quart is best for adults) put in your eggs and fixings close mix together and then boil in a pot of water for 7-10 min depending on how big your omelet is. Everyone gets what you want so it works for a variety of people. be careful back doesn't touch outside of pan
Wow, camping food is way different from when I was a kid. We always had a propane stove, so that could be the difference. We had taco salad, tuna noodle casserole, soup, spaghetti. We did hot dogs over the coals but never made these foil wraps. My mom always had enough food for twice as long as our trip. Good memories.
