Chocolate Eclair Dessert

Have you ever had a layered eclair dessert? If not, you have truly missed out! This is one of my favorite desserts and it is so simple to make...and it's no bake! I make mine slightly different than some that I have had in the past. I use 2 types of pudding instead of 1, but you certainly don't have to do that. Layers of pudding and Cool Whip, graham crackers and a chocolate sauce make up this perfect summertime treat.

Chocolate Eclair Dessert {No Bake!}

Chocolate Eclair Dessert

Filling:
1 (3.5 oz.) box vanilla instant pudding
1 (3.5 oz.) box chocolate instand pudding
3 c. milk, divided
1 (12 oz.) container Cool Whip, divided
Graham crackers
Topping:
1/3 c. cocoa
1 c. sugar
1/4 c. milk
1 stick butter (or margarine)
1 tsp. vanilla
Mix 1 1/2 c. milk with chocolate pudding; beat. Stir in 1/2 of the Cool Whip. Place a layer of graham crackers in the bottom of a 9x13" dish. Spread pudding mixture over graham crackers. Add another layer of crackers. Repeat with the vanilla pudding (mixing with 1 1/2 c. milk and the rest of the Cool Whip) and add pudding mixture over the graham crackers. Top with a final layer of graham crackers.
For the topping: Bring cocoa, milk, and sugar to a boil; boil about 1 minute, stirring very frequently. Remove from heat and cool one minute. Add butter and vanilla; stir until butter is melted. Pour over the top layer of graham crackers. Refrigerate over night.

  5. This was my Grandma's "go to" recipe for desserts. We only did the vanilla pudding though. It is still a family favorite here and the recipe is always asked for when we have this dish. =0)
