I love fruit desserts. And simple fruit desserts. Like this delicious Sara Lee pound cake with warm raspberry sauce. I've always been a fan of their frozen pound cake and was excited when they came out with pound cake slices. Individually wrapped, ready to go and only 160 calories/slice. Top it with a fruit sauce and it is a delicious low cal. treat.
By using frozen pound cake slices, making a dessert like this is a snap. I don't even have to thaw them. I just put them on the plate and they thaw quickly, or if I want to serve them warm I can microwave them for a few seconds.
This warm raspberry sauce takes less than 10 minutes to make and is very similar to the warm blueberry sauce that I have shared with you before. You can use any berry for this dessert, but raspberries are my favorite.
Warm Raspberry Sauce
12 oz. frozen red raspberries
1/4 c. sugar
2 T. water
1 T. fresh squeezed lemon juice
Combine all ingredients into a sauce pan and heat (while stirring) until mixture comes to a simmer and raspberries can be mashed down with the back of a wooden spoon (3-5 minutes).
Let cool 5 minutes to thicken. Serve on pound cake, cheese cake, or any other dessert that you want to dress up quickly.
